Olive Oil Blistered Tomatoes with Zucchini Noodles

Ingredients:

1 pint assorted cherry tomatoes, halved

2 cups zucchini noodles (2 large zucchini’s)

extra virgin greek olive oil

smoked chili flake

salt & pepper to taste

Directions:

In a skillet, warm olive oil to cook zucchini several minutes, until slightly softened.  remove from heat. Add a little more olive oil to pan, get hot enough to drop in cherry tomatoes sliced side down until sear forms.  turn over to sear dome side slightly (but don’t allow tomato to cook down — key is hot pan for quick “fry”).

Add tomatoes to zucchini, sprinkle smoked chili flake, salt & pepper to taste.

Also great served with sliced sausage !
