2 packed cups fresh parsley or cilantro
1 tbsp green onion, roughly chopped
2 tbsp apple cider vinegar (or fresh lemon juice)
1-2 cloves garlic, roughly chopped
salt and pepper to taste
1/4 cup olive oil (or more to taste)
Combine all ingredients (except olive oil) in a food processor. Start blending, then slowly add olive oil. Taste and adjust seasoning as necessary.
