Spinach Hummus

Hummus is a creamy chickpea dip or spread with many regional variations throughout North Africa, West Asia and the Mediterranean. Fresh spinach is a delightful addition for young cooks because it turns the hummus bright green!

Ingredients:

1 cup fresh spinach, roughly chopped

2-4 cloves garlic, peeled and minced

1 15 oz. can garbanzo beans/chickpeas, drained and rinsed

¼ cup tahini

3 tbsp. extra virgin olive oil

3 tbsp. lemon juice

¼ tsp. salt

Ingredients:

Directions:

  1. Gather all the ingredients and equipment. Wash the produce and prepare it as detailed in the ingredients list.
  2. In a food processor, combine the beans, tahini and blend until creamy.
  3. Add the garlic, spinach, olive oil, lemon juice and salt and blend.
  4. If spinach hummus is too thick, add 1 tbsp. water at a time until desired consistency. Hummus should be smooth and creamy.

Notes:

  • Serve with Homemade Crackers or pita chips.
  • If you’d like to make plain hummus, just skip the spinach.
