Lemony Herb Dressing

A dressing full of flavorful herbs with a lemony twist

Ingredients:

A handful of fresh herbs (any combination of parsley, rosemary, chives, oregano, basil)

1⁄4 cup lemon juice (juice from 2 lemons)

1⁄2 cup olive oil

salt, to taste

pepper, to taste

Optional:

pinch of sugar

Directions:

  1. Remove any dirt from herbs. Remove from stems, then mince leaves. (Compost stems!)
  2. Put lemon juice in a medium bowl. Whisk in olive oil in a slow stream. Alternately, you can shake all dressing ingredients together in a jar with a tight fitting lid.
  3. Add salt and pepper to taste. If your dressing is too acidic, try adding a pinch of sugar.
  4. Just before serving, toss dressing with greens and any add-ins you like.
