Cilantro Lime Dressing

Bright and fresh with a citrusy, peppery aroma, it complements not only Mexican cuisine but also serves as the perfect dressing to enhance any dish.

Ingredients:

1 garlic clove, peeled and finely minced

½ tsp salt

1 bunch cilantro, leaves and tender stems roughly chopped (1 ½ cups)

1 shallot or ¼ red onion, minced (3 Tbsp), optional

3 limes zested and juiced (¾ tsp zest and 3 Tbsp juice)

½  cup olive oil

2 tsp honey or sugar

½ tsp black pepper

Ingredients:

Directions:

  1. Gather all the ingredients and equipment. Wash the produce and prepare it as detailed in the ingredients list.
  2. Scrape the minced garlic, about 1 tsp, into the  blender or food processor.
  3. Add the cilantro, shallot, if using, lime zest and juice, olive oil, honey, black pepper.
  4. Blend until the mixture is almost smooth, about 10 seconds. Use a rubber spatula to scrape down the sides of the blender ensuring that all the ingredients are well combined.
  5. Taste and adjust seasonings if needed.

Note: Goes well with Sweet Potato Quesadillas!
