1 clove garlic, mashed through a microplane or grater
1/4 teaspoon salt
1 teaspoon maple syrup or brown sugar
1 teaspoon Dijon mustard
1/3 cup balsamic vinegar
2/3 – 1 cup extra virgin olive oil
Place mashed garlic and salt in a jar with a tight-fitting lid and smash together to create a paste.
Add maple syrup or brown sugar and mustard and stir well.
Add vinegar and olive oil, close the lid tight and shake vigorously to combine.
