Ingredients:
1 garlic clove, peeled and finely minced
½ tsp salt
1 bunch cilantro, leaves and tender stems roughly chopped (1 ½ cups)
1 shallot or ¼ red onion, minced (3 Tbsp), optional
3 limes zested and juiced (¾ tsp zest and 3 Tbsp juice)
½ cup olive oil
2 tsp honey or sugar
½ tsp black pepper

Blender or Food processor

Directions:
- Gather all the ingredients and equipment. Wash the produce and prepare it as detailed in the ingredients list.
- Scrape the minced garlic, about 1 tsp, into the blender or food processor.
- Add the cilantro, shallot, if using, lime zest and juice, olive oil, honey, black pepper.
- Blend until the mixture is almost smooth, about 10 seconds. Use a rubber spatula to scrape down the sides of the blender ensuring that all the ingredients are well combined.
- Taste and adjust seasonings if needed.
Note: Goes well with Sweet Potato Quesadillas!
