Chili Lime Slaw

Dutch immigrants originally popularized coleslaw in the U.S. and this spicy twist is one of many ways to enhance the chilled cabbage dish with different ingredients and flavors.

Ingredients:

¼  – ½ head of green cabbage, finely sliced

¼ – ½ head of red cabbage, finely sliced

2 medium carrots, roughly grated

1 lime, juiced

¼ cup cilantro leaves, finely chopped (optional)

2-3 tbsp. white wine vinegar OR apple cider vinegar

⅛ tsp. cayenne pepper OR chili powder

¼ tsp. salt

1 tbsp. sugar

Equipment:

Kitchen knife
Cutting board
Juicer OR fork
Box grater
Measuring cups and spoons
Jar with a lid OR other container for dressing

Ingredients:

Directions:

  1. Wash and prepare the produce by slicing, grating, juicing and chopping them as noted in the ingredients list.
  2. Prepare the dressing by combining the lime juice, cilantro, vinegar, cayenne pepper, salt and sugar in a jar with a lid (or another container) and shake or mix thoroughly.
  3. In a large bowl, combine the cabbage and carrots and toss to combine. Add the dressing and toss again before serving.
