Melon Salad

This light and refreshing summer salad combines the sweetness of watermelon and cantaloupe with salty feta cheese, a popular combination across the Mediterranean.

Ingredients:

1 seedless watermelon, rind removed

½ cantaloupe, seeded, rind removed, and chopped into bite-size pieces

½ cup basil OR mint leaves, thinly sliced

1 lime, zested and juiced

1 tsp. honey

2-3 tsp. extra virgin olive oil

⅛ tsp. ground black pepper

8 oz. feta cheese, crumbled

Equipment:

Cutting board
Large bowl
Microplane
Juicer OR fork
Measuring cups and spoons
Jar with a lid OR other container for dressing

1 lime, zested and juiced

Directions:

  1. Wash all the fresh ingredients.
  2. Ask for an adult’s help to cut open the melon, remove the rind, and chop the flesh into bite-sized pieces.
  3. Remove the seeds and rind from the cantaloupe and chop the flesh into bite-sized pieces.
  4. Thinly slice the fresh basil or mint leaves.
  5. Zest and juice the lime.
  6. In a large bowl, combine the watermelon, cantaloupe and herbs and mix gently.
  7. Combine the lime juice and zest, olive oil, honey and black pepper in a jar with a lid (or another container) and shake or mix thoroughly.
  8. Add the dressing to the fruit mixture, along with the feta cheese and gently toss together.
