Melon Salad

This light and refreshing summer salad combines the sweetness of watermelon and cantaloupe with salty feta cheese, a popular combination across the Mediterranean.

Ingredients:

1 seedless watermelon, rind removed

½ cantaloupe, seeded, rind removed, and chopped into bite-size pieces

½ cup basil OR mint leaves, thinly sliced

1 lime, zested and juiced

1 tsp. honey

2-3 tsp. extra virgin olive oil

⅛ tsp. ground black pepper

8 oz. feta cheese, crumbled

Microplane

Juicer OR fork

Measuring cups and spoons

Jar with a lid OR other container for dressing

Ingredients:

Directions:

  1. Gather all the ingredients and equipment. Wash the produce and prepare it as detailed in the ingredients list.
  2. Ask for an adult’s help to cut open the watermelon and cantaloupe before remove the rinds and chopping the flesh into bite-sized pieces.
  3. In a large bowl, combine the watermelon, cantaloupe and herbs and mix gently.
  4. Combine the lime juice and zest, olive oil, honey and black pepper in a jar with a lid (or another container) and shake or mix thoroughly.
  5. Add the dressing to the fruit mixture, along with the feta cheese and gently toss together.
