Strawberry Balsamic Vinaigrette

Try this sweet and simple salad dressing to top your favorite spring and early-summer salads. It is a great way to use bruised or frozen strawberries.

Ingredients:

½ pint strawberries, trimmed and diced, OR 8 oz. defrosted frozen strawberries

¾ tsp. fresh tarragon, minced OR ¼ tsp. dried tarragon

¼ cup extra virgin olive oil

3 tbsp. balsamic vinegar

½ tsp. salt

¼ tsp. ground black pepper

½ tsp. sugar

Equipment:

Cutting board
Kitchen knife
Measuring cups and spoons
Jar with a lid OR other container for dressing
Blender OR food processor (optional)

Directions:

  1. Wash the strawberries, trim and then dice them.
  2. If using fresh tarragon, wash and mince it.
  3. Combine the strawberries, tarragon, olive oil, balsamic vinegar, salt, black pepper and sugar in a jar with a lid (or another container) and shake or mix thoroughly.

Note: For a dressing with a smoother consistency, combine all ingredients In a blender OR food processor, and blend until smooth.
