Roasted Broccoli & Cauliflower

Tender roasted broccoli & cauliflower paired with a spicy dipping sauce

Ingredients:

MAIN DISH:

2 bunches broccoli, chopped (2-3″ pieces)

2 bunches cauliflower, chopped (2-3″ pieces)

olive oil

salt and pepper to taste

SPICE YOGURT DIPPING SAUCE:

1 pint plain Greek yogurt

½ – 1 teaspoon ground cumin

½ – 1 teaspoon mild curry powder

1 lemon, juiced

Optional for the dipping sauce:

1 clove garlic, peeled and minced

Ingredients:

MAIN DISH:

2 bunches broccoli, chopped (2-3″ pieces)

2 bunches cauliflower, chopped (2-3″ pieces)

SPICE YOGURT DIPPING SAUCE:

1 pint plain Greek yogurt

½ – 1 teaspoon ground cumin

Directions:

  1. Preheat oven to 425°F. Gather all the ingredients and equipment. Wash the produce and prepare it as detailed in the ingredients list.
  2. Place all the chopped broccoli and cauliflower in a large bowl or pot and drizzle with olive oil and salt and pepper. Use your hands to toss the vegetables with the olive oil; they should be lightly coated, but not drenched in oil.
  3. Spread them into large glass baking dishes or rimmed cookie sheets, spreading into a single layer (if they are piled on top of each other, they will steam instead of roast). Roast for 20 – 30 minutes, although you should begin checking them after 15 minutes when you may want to toss them again to avoid letting the bottoms burn. They should be taken out when they start to brown in spots and are just becoming tender. This dish is delicious when paired with a spiced yogurt dipping sauce.
