Founded in 2013, Lindera Farm’s produces vinegars, hot sauce and soy sauce. Their vinegar-making process is a combination of traditional wine-making practices and modern culinary techniques. To start, Lindera forages berries, flowers, roots and herbs, sources produce from small, local farms, and combines these ingredients with honey or molasses to create an intense, flavorful wine. Next step is slowly fermenting into a vinegar; not just adding alcohol to a finished juice,or blending ingredients into a finished vinegar. Allowing the vinegar to age enough for the acids to soften results in vinegar that is richer, more aromatic, and more flavorful.
